  • Highball glass
  • Muddler
  • Bar spoon
  • Jigger
  • Knife and cutting board
  • Small bowl
  • Ice scoop

Ingredients

  • 8-10 fresh mint leaves
  • 2-3 lime wedges
  • 2 oz white rum
  • 1 oz simple syrup or sugar or 2 tsp sugar
  • 1 oz fresh lime juice
  • 1-2 drops peppermint extract optional
  • crushed ice enough to fill glass
  • club soda or sparkling water to top off
  • lime slice or wedge for garnish
  • extra mint sprig for garnish

Instructions

  • Drop the fresh mint leaves and lime wedges into your highball glass.
  • Add simple syrup or sugar on top.
  • Gently muddle the mint and lime to release their oils and juice.
  • Pour in white rum and fresh lime juice.
  • Add 1–2 drops of peppermint extract if desired for a stronger peppermint flavor.
  • Fill the glass with crushed ice.
  • Top with club soda or sparkling water and give a light stir.
  • Garnish with a lime wedge and a sprig of fresh mint.

Notes

Crushed ice chills the drink quickly and mixes well with the soda. Muddle gently to avoid bitterness. Peppermint extract is optional—use just a drop or two for a refreshing kick.
