Ingredients

  • 2 oz white rum or light rum
  • 0.5 oz peppermint schnapps
  • 1 oz lime juice freshly squeezed
  • 0.75 oz simple syrup or fine sugar
  • 6-8 mint leaves preferably spearmint
  • club soda to top
  • crushed ice
  • lime wedges for garnish
  • small peppermint candy or chocolate shavings, optional garnish

Instructions

  • Add mint leaves and lime wedges to your highball glass.
  • Add simple syrup or sugar.
  • Muddle gently to release oils and juice.
  • Fill glass with crushed ice.
  • Pour in white rum and peppermint schnapps.
  • Add lime juice.
  • Stir gently with a bar spoon.
  • Top with club soda.
  • Garnish with a lime wedge, mint sprig, or peppermint candy.

Notes

Spearmint gives a milder flavor than peppermint leaves. Adjust simple syrup to taste. For extra holiday flair, add chocolate shavings on top. Serve immediately for best fizz and freshness.
