Make sage simple syrup: Heat water and sugar in a small pot until sugar dissolves. Add sage leaves and simmer for 5 minutes. Remove from heat, let cool, and strain.
Place 2 sage leaves in the shaker and muddle gently to release oils.
Add pear juice, sage simple syrup, and lemon juice to the shaker.
Fill shaker with ice and shake for 10-12 seconds.
Strain mixture into a Collins glass filled with fresh ice.
Top with club soda and stir gently.
Garnish with a pear slice and fresh sage leaf.

The sage simple syrup keeps in the fridge for up to 2 weeks in an airtight container.Fresh pear juice works best, but good quality store-bought juice can work too.For a sweeter drink, add an extra 1/2 oz of sage simple syrup.This recipe makes one serving.
