Equipment

  • Large cocktail shaker
  • Muddler
  • Fine-mesh strainer
  • Collins glass
  • Ice cube tray
  • Measuring jigger
  • Small pot for syrup

Ingredients

  • 3 oz fresh pear juice
  • 1 oz sage simple syrup
  • 1 oz fresh lemon juice
  • 4-5 fresh sage leaves
  • Club soda
  • Ice cubes
  • Pear slice and sage leaf for garnish

For sage simple syrup:

  • 1 cup water
  • 1 cup sugar
  • 8-10 fresh sage leaves

Instructions

  • Make sage simple syrup: Heat water and sugar in a small pot until sugar dissolves. Add sage leaves and simmer for 5 minutes. Remove from heat, let cool, and strain.
  • Place 2 sage leaves in the shaker and muddle gently to release oils.
  • Add pear juice, sage simple syrup, and lemon juice to the shaker.
  • Fill shaker with ice and shake for 10-12 seconds.
  • Strain mixture into a Collins glass filled with fresh ice.
  • Top with club soda and stir gently.
  • Garnish with a pear slice and fresh sage leaf.

Notes

The sage simple syrup keeps in the fridge for up to 2 weeks in an airtight container.
Fresh pear juice works best, but good quality store-bought juice can work too.
For a sweeter drink, add an extra 1/2 oz of sage simple syrup.
This recipe makes one serving. Double or triple ingredients to serve more guests.
