Equipment

  • Cocktail shaker
  • Muddler
  • Fine-mesh strainer
  • Measuring jigger or tablespoon
  • Tall glass
  • Small knife and cutting board
  • Spoon or small fork
  • Ice cube tray

Ingredients

  • 1 ripe pear peeled, cored, diced
  • 1-2 fresh thyme sprigs plus extra for garnish
  • 1 tablespoon honey or agave syrup
  • 0.5 lemon juiced
  • 0.5 cup sparkling water or club soda
  • Ice cubes
  • Extra pear slices for garnish, optional

Instructions

  • Toss the diced pear and honey or agave into the shaker.
  • Add the thyme sprigs and muddle everything to get the flavors going.
  • Pour in the lemon juice, then fill the shaker with ice.
  • Shake it up until the mixture is nice and cold.
  • Strain into a tall glass packed with fresh ice.
  • Top off with sparkling water or club soda.
  • Give it a gentle stir.
  • Garnish with pear slices and a sprig of thyme if you’re feeling fancy.

Notes

Use ripe, soft pears for best flavor and easier muddling. Swap honey for agave to make it vegan. Prep the muddled pear, thyme, honey, and lemon juice ahead of time and keep in the fridge. Add ice and sparkling water right before serving. For a twist, a splash of ginger ale is delicious too.
