This twist on the classic Collins blends crisp pear puree, gin, lemon juice, and sage for a bright, smooth cocktail with refreshing bubbles and subtle herbal notes.
Add sage leaves and simple syrup to a shaker and muddle gently to release sage oils.
Add gin, lemon juice, and pear puree. Add ice and shake for 10–12 seconds.
Strain into a highball glass filled with ice.
Top with soda water and stir lightly.
