Add pear & ginger syrup, pear juice, and lemon juice. Shake for about 10 seconds.
Strain into a highball or wine glass packed with fresh ice.
Slowly pour in the chilled prosecco.

Notes
To make pear & ginger syrup: Simmer equal parts sugar and water with fresh ginger slices and chopped pear for 10 minutes, then strain. Add more lemon if pears are very sweet. For a mocktail, swap prosecco for sparkling water.
