  • Muddler
  • Jigger or measuring cup
  • Strainer
  • Highball glass

Ingredients

For one cocktail:

  • 2 oz vodka
  • 1 oz peach nectar
  • 1/2 oz fresh lemon juice
  • 1/2 oz simple syrup
  • 2-3 fresh peach slices
  • 2-3 sprigs of fresh thyme
  • Soda water
  • Ice

Use good quality vodka for the best taste. Fresh peaches work better than canned. If peach nectar isn't available, you can use peach puree instead.

Instructions

  • Put peach slices and thyme in the shaker. Muddle gently to release flavors.
  • Add vodka, peach nectar, lemon juice, and simple syrup to the shaker.
  • Fill the shaker with ice and shake for 10-15 seconds.
  • Strain the mixture into a highball glass filled with ice.
  • Top with soda water and stir lightly.
  • Garnish with a peach slice and thyme sprig.

Serve right away while the drink is cold and bubbly.

    Notes

    You can adjust the sweetness by changing the amount of simple syrup. For a stronger peach flavor, use more peach nectar. The thyme adds a nice herbal note, but don't overdo it or it may overpower the other flavors.
    This recipe is easy to scale up for a crowd. Just multiply the ingredients by the number of drinks you want to make. You can mix everything except the soda water in advance and add it just before serving.
    For a non-alcoholic version, replace the vodka with extra soda water or peach nectar.
