Instructions
Add mint leaves and peach slices to a highball glass; gently muddle to release oils and juices.
Add fresh lime juice, simple syrup, and white rum. Fill the glass halfway with ice.
Stir (or shake in a separate shaker and return to the glass) until well chilled.
Top with club soda or sparkling water and give a gentle stir.
Garnish with a mint sprig, peach slice, and lime wedge. Serve immediately.
