Ingredients

  • 2 oz white rum
  • 1 oz fresh lime juice
  • 1 oz simple syrup adjust to taste
  • 0.5 ripe peach sliced; or use puree option below
  • 2 tbsp peach puree optional, in place of peach slices
  • 6-8 leaves fresh mint
  • 2-3 oz club soda or sparkling water to top
  • ice cubes for glass and shaker
  • peach slices, mint sprig, lime wedge for garnish

Instructions

  • Add mint leaves and peach slices to a highball glass; gently muddle to release oils and juices.
  • Add fresh lime juice, simple syrup, and white rum. Fill the glass halfway with ice.
  • Stir (or shake in a separate shaker and return to the glass) until well chilled.
  • Top with club soda or sparkling water and give a gentle stir.
  • Garnish with a mint sprig, peach slice, and lime wedge. Serve immediately.

Notes

Use ripe peaches for natural sweetness; adjust simple syrup to taste. For a smoother texture, swap slices for peach puree and fine‑strain. Chill rum and soda to minimize dilution, and avoid over‑muddling mint to prevent bitterness.
