  • Large pitcher
  • Muddler or wooden spoon
  • Measuring cups and spoons
  • Fine-mesh strainer
  • Tall glasses
  • Ice cube tray

Ingredients

  • 4 ripe peaches pitted and sliced
  • 20 fresh mint leaves
  • 2 tablespoons honey
  • 1/2 cup fresh lemon juice
  • 3 cups sparkling water
  • Ice cubes
  • Extra peach slices and mint for garnish

Instructions

  • Muddle the peach slices and mint leaves in the pitcher until the peaches release their juice.
  • Add honey and lemon juice to the pitcher. Stir until the honey dissolves completely.
  • Strain the mixture through a fine mesh strainer into a clean pitcher.
  • Fill tall glasses with ice cubes.
  • Pour the peach-mint mixture evenly into the glasses, filling them about 1/3 full.
  • Top each glass with sparkling water and stir gently.
  • Garnish with fresh peach slices and mint leaves.

Notes

The drink tastes best when served right away while the bubbles are fresh.
Store any leftover peach-mint mixture in an airtight container in the fridge for up to 2 days. Add sparkling water just before serving.
For a sweeter drink, add more honey to taste. Using ripe peaches will give the best flavor.
Make ahead tip: Prepare the peach-mint mixture up to 24 hours in advance and add sparkling water when ready to serve.
