Equipment

  • Medium saucepan
  • Cutting board and knife
  • Fine-mesh strainer
  • Wooden spoon
  • Mason jar or pitcher
  • Measuring cups and spoons
  • Tall glasses
  • Optional: muddler

Ingredients

  • 3 ripe peaches fresh or frozen
  • 2 inch fresh ginger root peeled and sliced
  • 3 black tea bags or green tea bags peach black tea works too
  • 4 cups water
  • 2-3 tablespoons honey, brown sugar, maple syrup, or monk fruit to taste
  • 2 tablespoons fresh lemon juice
  • ice cubes
  • fresh peach slices, lemon slices, and mint leaves or rosemary sprigs for garnish
  • optional splash of coconut water or tonic water for a lighter twist

Instructions

  • Boil 4 cups of water in a saucepan.
  • Add tea bags and steep for 5 minutes. Remove the tea bags.
  • Add the sliced ginger to the hot tea and let it sit for 10 minutes, then strain out the ginger.
  • Blend 2 peaches until smooth, then strain to remove pulp.
  • Mix peach juice, tea, lemon juice, and sweetener in a pitcher.
  • Chill in the refrigerator for at least 1 hour.
  • Serve over ice in tall glasses. Garnish with peach slices, lemon slices, and mint or rosemary. Optional: add coconut water or tonic water for fizz.

Notes

Use ripe peaches for more sweetness, or swap in frozen if out of season. Try black tea for a stronger flavor, or green tea for something lighter. Coconut water adds hydration; tonic water brings fizz. Adjust sweetener to taste!
