Ingredients

For a 64 oz pitcher (about 8-10 servings):

  • 4 ripe peaches pitted and chopped
  • 1/4 cup simple syrup
  • 2 tablespoons fresh lemon juice
  • 2 bottles 750 ml each chilled Prosecco or other sparkling wine
  • Fresh peach slices for garnish

You can use frozen peaches if fresh ones aren't in season. Swap out the simple syrup for honey if you prefer. White peaches give a more subtle flavor than yellow ones.

Instructions

  • Peel the peaches if desired. Cut them in half, remove the pits, and chop into chunks.
  • Add peach chunks, simple syrup, and lemon juice to a blender. Blend until smooth.
  • Pour the peach mixture through a fine-mesh strainer into the chilled pitcher. This removes any pulp.
  • Slowly pour in the chilled Prosecco. Stir gently to mix.
  • Add fresh peach slices to the pitcher for extra flavor and visual appeal.
  • Pour into chilled champagne flutes and serve right away.

Make sure to stir the pitcher before each pour, as the peach puree may settle at the bottom.

    Notes

    This recipe can be made up to 4 hours ahead. Prep the peach puree and keep it chilled. Add the Prosecco just before serving to keep it bubbly.
    For a non-alcoholic version, use sparkling water or white grape juice instead of Prosecco. You can also try other stone fruits like nectarines or apricots for variety.
    If the drink is too sweet, add more lemon juice. If it's not sweet enough, mix in more simple syrup.
    Serve the Bellinis with light appetizers like prosciutto-wrapped melon or bruschetta. They pair well with brunch foods too.
