Ingredients

For 4 servings of Peach Bellini Bliss Cocktail, you'll need:

  • 2 ripe peaches pitted and chopped
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon sugar optional
  • 1 bottle 750 ml chilled Prosecco or sparkling wine
  • Fresh peach slices for garnish
  • Ripe juicy peaches work best for this recipe.

Instructions

Follow these steps to make your Peach Bellini Bliss Cocktail:

  • Put the chopped peaches, lemon juice, and sugar (if using) in a blender.
  • Blend until smooth.
  • Strain the mixture through a fine-mesh strainer into a bowl.
  • Chill the peach puree for at least 30 minutes.
  • Pour about 2 tablespoons of peach puree into each champagne flute.
  • Slowly add chilled Prosecco to each glass, filling about 3/4 full.
  • Stir gently to mix the puree and Prosecco.
  • Garnish with a fresh peach slice.

Serve right away while the drink is cold and bubbly.

    Notes

    For the best taste, use ripe, fresh peaches when they're in season. If fresh peaches aren't available, you can use frozen peaches. Just thaw them first.
    You can make the peach puree ahead of time. It will keep in the fridge for up to 2 days.
    For a non-alcoholic version, replace the Prosecco with sparkling water or ginger ale.
    Be careful not to overfill the glasses. The mixture might bubble up and spill over.
