Ingredients

Base Ingredients (Makes 2 servings):

  • 1 cup peach puree fresh or store-bought
  • 10-12 fresh basil leaves
  • 2 tablespoons honey or simple syrup
  • 2 tablespoons fresh lemon juice
  • 1 cup sparkling water or soda water
  • Ice cubes

Optional Garnishes:

  • Fresh peach slices
  • Basil sprigs
  • Lemon wedges
  • Sugar for rimming glasses

For a stronger peach flavor, use ripe peaches in season (June through September).

Instructions

  • Prepare the peach puree: If using fresh peaches, peel, pit, and slice 2-3 ripe peaches. Blend until smooth. Strain if desired for a smoother texture.
  • Muddle the basil: Place basil leaves in the cocktail shaker or mason jar. Gently muddle to release the oils and aroma without tearing the leaves.
  • Combine ingredients: Add peach puree, honey (or simple syrup), and lemon juice to the basil. Add a handful of ice and shake vigorously for 15-20 seconds.
  • Strain and serve: Fill two tall glasses with ice. Strain the mixture into the glasses, filling them about 2/3 full.
  • Add finishing touch: Top each glass with sparkling water and stir gently. Garnish with peach slices and basil sprigs

Notes

This mocktail can be prepared up to 8 hours ahead (without the sparkling water) and stored in the refrigerator. Add the sparkling water just before serving to maintain the fizz.
For a sweeter version, increase the honey or simple syrup to 3 tablespoons. Those preferring a tarter drink can add an extra tablespoon of lemon juice.
The recipe is easily doubled or tripled for gatherings.
Consider making a large batch in a pitcher, keeping the sparkling water separate until serving time.
For a fun variation, freeze peach puree in ice cube trays and use these instead of regular ice cubes to prevent dilution of flavor as the ice melts.
