Ingredients

Base Tea:

  • 6 cups of water
  • 4 black tea bags or 2 tablespoons loose-leaf black tea
  • 1/4 cup honey or agave syrup adjust to taste
  • 3 ripe peaches sliced
  • 1 cup fresh basil leaves plus extra for garnish
  • 1/2 cup fresh lemon juice
  • Ice cubes

  • Frozen peaches as an alternative to fresh

The quality of peaches greatly affects the final flavor. Choose ripe, fragrant peaches for the best results.

Instructions

  • Prepare the tea base: Bring 6 cups of water to a boil. Remove from heat and add tea bags. Steep for 5-7 minutes, then remove tea bags.
  • Add sweetener: While the tea is still warm, stir in honey or agave syrup until completely dissolved.
  • Cool the tea: Allow the sweetened tea to cool to room temperature (about 30 minutes).
  • Prepare the peaches: Wash, pit, and slice the peaches. Reserve a few slices for garnish if desired.
  • Muddle basil and peaches: In the pitcher, gently muddle most of the basil leaves with the peach slices to release their flavors.
  • Combine ingredients: Pour the cooled tea into the pitcher with the muddled peaches and basil. Add lemon juice and stir well.
  • Chill: Refrigerate for at least 2 hours (or overnight for stronger flavor).
  • Serve: Fill glasses with ice, pour the tea mixture over, and garnish with fresh basil leaves and peach slices.

For best results, stir the mixture before serving as some ingredients may settle at the bottom.

    Notes

    This recipe can be modified based on personal preferences. For a stronger peach flavor, purée one of the peaches before adding to the tea.
    The mocktail keeps well in the refrigerator for up to 3 days, though the basil may darken slightly. Remove basil after 24 hours if storing longer.
    For a sparkling version, mix equal parts of the tea mixture with cold sparkling water just before serving. This creates a lighter, bubbly drink perfect for hot days.
    Those wanting a less sweet version can reduce the honey or substitute with a sugar-free sweetener.
    The natural sweetness of ripe peaches also allows for less added sweetener.
