Ingredients

Base Ingredients:

  • 3 ripe peaches pitted and sliced (or 2 cups frozen peaches)
  • 15-20 fresh basil leaves plus extra for garnish
  • 1/4 cup honey or simple syrup adjust to taste
  • 1/4 cup fresh lemon juice about 2 lemons
  • 4 cups sparkling water or club soda
  • Ice cubes

  • 1/2 cup white grape juice for extra sweetness
  • Peach slices for garnish
  • Lemon wheels for garnish
  • Fresh berries for garnish

Fresh, ripe peaches work best for this recipe, but frozen peaches can be used when fresh ones aren't available.

Instructions

  • Prepare the peach puree: Add peaches to a blender with 2 tablespoons of honey and blend until smooth. Strain through a fine mesh strainer to remove any pulp if desired.
  • Muddle the basil: Place basil leaves in the bottom of a pitcher. Gently muddle to release the oils and aroma.
  • Combine ingredients: Add the peach puree, lemon juice, and remaining honey to the pitcher with the muddled basil. Stir to combine.
  • Add sparkling water: Just before serving, add the sparkling water and stir gently.
  • Serve: Fill glasses with ice, pour in the peach basil mixture, and garnish with fresh basil leaves and peach slices.

Let the mixture sit for 15-20 minutes before serving to allow the flavors to blend. This recipe serves 4-6 people depending on glass size.

    Notes

    The mocktail can be prepared up to 24 hours in advance. Just keep the peach-basil base refrigerated and add the sparkling water right before serving.
    For a stronger basil flavor, let the leaves steep in the mixture longer. Remove them after a few hours if you don't want the basil flavor to become too intense.
    Try different herb variations like mint or rosemary instead of basil. Frozen peach cubes can replace regular ice for a more intense peach flavor without dilution.
    This drink pairs well with spicy foods and summer barbecues. For kids, reduce the basil and add a splash of vanilla extract for a peaches and cream flavor.
