Equipment

  • Large pitcher (64 oz capacity)
  • Citrus juicer or reamer
  • Fine-mesh strainer
  • Long mixing spoon
  • Measuring cups and spoons
  • Sharp knife
  • Cutting Board

Ingredients

  • 6 ripe passionfruits
  • 8 fresh lemons
  • 1 cup simple syrup
  • 4 cups cold water
  • Ice cubes
  • Fresh mint leaves for garnish
  • Lemon slices for garnish

Simple Syrup:

  • 1 cup granulated sugar
  • 1 cup water

Instructions

  • Cut the passionfruits in half. Then, scoop out the pulp and seeds into a fine mesh strainer set over a bowl.
  • Press the pulp through the strainer with a spoon to extract the juice. Set aside.
  • Make simple syrup by heating sugar and water in a small pot until the sugar dissolves. Let it cool.
  • Juice the lemons until you have 1 cup of fresh juice.
  • In the pitcher, combine passionfruit juice, lemon juice, and simple syrup.
  • After that, add cold water and stir well.
  • Taste and adjust the sweetness if needed.
  • Fill glasses with ice and pour in the mocktail.
  • Finally, garnish with mint leaves and lemon slices.

Notes

Store the mocktail in the fridge for up to 3 days. The flavor gets better after a few hours when the ingredients blend together.
If passionfruits aren't ripe, let them sit at room temperature for 3-4 days.
For extra fizz, add sparkling water right before serving.
Frozen passionfruit pulp works as a substitute when fresh fruit isn't available. Use 1 cup of pulp instead of 6 fresh passionfruits
