Add vodka, passion fruit puree, and lime juice to the shaker.
Shake for 10-15 seconds until well chilled.
Fill a highball glass with fresh ice cubes.
Strain the mixture into the glass.
Top with tonic water and stir gently with a bar spoon.
Add a passion fruit half and mint sprig for garnish.
Notes
Fresh passion fruit works best for this recipe. If using store-bought puree, check for added sugar and adjust amounts as needed.The drink can be made less sweet by reducing the passion fruit puree to 3/4 oz.Store leftover passion fruit puree in an airtight container in the fridge for up to 3 days.For best results, use chilled tonic water to keep the drink cold longer.
