Ingredients

  • 2 ripe passion fruits
  • 1 oz 30ml fresh lime juice
  • 1 oz 30ml simple syrup
  • 4 oz 120ml sparkling water
  • Fresh mint leaves for garnish
  • 1 lime wedge for garnish
  • Ice cubes

The key to this recipe is using ripe passion fruits. They should feel slightly wrinkled and heavy for their size.

Instructions

  • Cut the passion fruits in half and scoop out the pulp into a small bowl.
  • Press the pulp through a fine-mesh strainer to extract the juice, discarding seeds.
  • Fill a highball glass with ice cubes.
  • Add the passion fruit juice, lime juice, and simple syrup to the glass.
  • Stir gently with a bar spoon to combine the ingredients.
  • Top with sparkling water.
  • Garnish with mint leaves and a lime wedge.
  • Serve immediately.

The drink should have a vibrant yellow-orange color. Stir just enough to mix the ingredients without losing carbonation.

    Notes

    This recipe makes one serving but can be easily multiplied for a crowd. For a sweeter drink, add more simple syrup. For a more tart flavor, increase the lime juice.
    Passion fruit puree can substitute fresh passion fruit when out of season. Use about 2 tablespoons of puree per drink.
    Frozen passion fruit pulp works too—thaw before using.
    For a fancy touch, freeze edible flowers in ice cubes to add to the drink. This works well for special occasions.
