Fill the champagne flute or wine glass halfway with ice cubes.
Pour the passion fruit puree into the glass.
Add the chilled prosecco slowly to prevent overflow.
Top with soda water and stir gently with a bar spoon.
Cut the fresh passion fruit in half and scoop the pulp and seeds from one half into the drink.
Garnish with a mint sprig if desired.

The drink can be made with other sparkling wines like cava or champagne instead of prosecco.Store leftover passion fruit puree in an airtight container in the fridge for up to 3 days.For a stronger drink, add 1/2 oz of vodka or gin.Fresh passion fruit makes the best cocktail, but frozen pulp works too.Make sure all ingredients are well-chilled before mixing for the best results.
