  • Measuring jigger or measuring cups
  • Bar spoon or long-handled spoon
  • Citrus juicer
  • Fine-mesh strainer
  • Ice bucket
  • Cutting board and knife

Ingredients

  • 2 ripe passion fruits
  • 2 oz 60ml freshly squeezed orange juice
  • 1/2 oz 15ml simple syrup
  • 4 oz 120ml soda water or sparkling water
  • 1 orange slice for garnish
  • 1 sprig of mint for garnish
  • Ice cubes

For the best flavor, use ripe passion fruits that give slightly when pressed. They should look wrinkled on the outside, which indicates ripeness.

Instructions

  • Cut the passion fruits in half and scoop out the pulp into a fine mesh strainer set over a small bowl.
  • Press the pulp with a spoon to extract the juice, collecting about 1 oz (30ml) of passion fruit juice.
  • Fill your glass with ice cubes.
  • Pour the passion fruit juice, orange juice, and simple syrup into the glass.
  • Stir gently with a bar spoon to combine the flavors.
  • Top with soda water and stir once more, very gently to avoid losing carbonation.
  • Garnish with an orange slice and a sprig of mint. The mint adds a fresh aroma that complements the tropical and citrus notes.

Notes

This recipe can be easily scaled up to make a pitcher for parties. Simply multiply the ingredients by the number of servings needed.
For a sweeter version, increase the simple syrup to 3/4 oz (22ml). If you prefer it less sweet, reduce to 1/4 oz (7ml).
Passion fruit puree can be substituted if fresh passion fruits aren't available. Use about 1 oz (30ml) of puree per serving.
The mocktail is best served immediately while the soda water is still bubbly. If preparing in advance, mix everything except the soda water, then add it just before serving.
