Ingredients

  • 2 oz tequila (blanco)
  • 2 oz fresh grapefruit juice
  • 0.5 oz fresh lime juice
  • 0.5 oz honey rosemary simple syrup
  • 2.5 oz grapefruit soda or club soda to top
  • kosher salt for rim, optional
  • rosemary sprig for garnish
  • grapefruit wedge for garnish
  • ice cubes

Instructions

  • Prep the glass by running a lime wedge around the rim and dipping it in kosher salt.
  • Add rosemary sprig and honey syrup to shaker, muddle gently.
  • Add tequila, grapefruit juice, and lime juice to shaker. Fill with ice.
  • Shake well for 15 seconds until chilled.
  • Strain into a glass filled with fresh ice. Top with grapefruit soda or club soda and stir gently.
  • Garnish with a rosemary sprig and grapefruit wedge. Serve immediately.

Notes

Make honey rosemary syrup by simmering equal parts honey and water with rosemary. Fresh grapefruit juice is best. Can be batched ahead and topped with soda to serve. Salted rim is optional but classic.
