Equipment

  • Cocktail shaker
  • Jigger
  • Bar spoon
  • Fine strainer
  • Citrus juicer
  • Small plate
  • Rocks glass
  • Highball glass
  • Ice cubes
  • Small saucepan

Ingredients

  • 2 oz silver tequila or blanco tequila
  • 2 oz fresh grapefruit juice
  • 0.5 oz fresh lime juice
  • 0.5 oz simple syrup or agave nectar, adjust as you like
  • 2 oz sparkling water or grapefruit soda
  • salt for the rim
  • ice cubes for shaking and serving
  • 1 sprig thyme small, for garnish

Instructions

  • Run a lime wedge around the rim of your glass, then dip it in salt.
  • Toss some ice into your cocktail shaker.
  • Pour in the tequila, grapefruit juice, lime juice, and simple syrup.
  • Shake it up for about 10 seconds, just until it’s chilled.
  • Strain into your prepared glass filled with fresh ice.
  • Top off with sparkling water or grapefruit soda.
  • Give it a gentle stir with a bar spoon.
  • Garnish with a small thyme sprig or a thin slice of grapefruit.

Notes

Use fresh grapefruit juice for best flavor. Try mezcal for a smoky twist, or skip the syrup for a less sweet drink. A thyme-infused simple syrup (simmer equal parts sugar and water with a few thyme sprigs, then cool) adds extra herbal flavor.
