Ingredients

  • 2 oz tequila blanco
  • 2 oz fresh grapefruit juice
  • 0.75 oz chamomile syrup see notes for recipe
  • 0.5 oz fresh lime juice
  • 2 oz sparkling water
  • ice cubes for shaking and serving
  • grapefruit wedge or chamomile flower, for garnish

Instructions

  • Fill your shaker halfway with ice.
  • Add tequila, grapefruit juice, chamomile syrup, and lime juice.
  • Shake for about 10 seconds, just until chilled.
  • Strain into a rocks glass with fresh ice.
  • Top with sparkling water and give it a gentle stir.
  • Garnish with a grapefruit wedge or a chamomile flower.

Notes

To make chamomile syrup: steep 1 tbsp dried chamomile in 1/2 cup hot water for 5 minutes, then stir in 1/2 cup sugar until dissolved. Cool before using. Adjust sweetness and acidity to taste; add more soda for a lighter drink. Best with fresh grapefruit juice. Serve with light snacks. Syrup keeps in fridge for up to a week.
