Ingredients

For an 8-serving pitcher, you'll need:

  • 2 cups white rum
  • 1 cup fresh lime juice about 8-10 limes
  • 1 cup simple syrup
  • 2 cups club soda
  • 1 cup loosely packed fresh mint leaves
  • 2 limes sliced
  • Ice cubes

Use high-quality rum for the best flavor. Fresh limes are key - avoid bottled juice. Make simple syrup by mixing equal parts sugar and water until dissolved.

Instructions

  • Wash and dry mint leaves. Add to pitcher with lime slices.
  • Gently muddle to release mint oils.
  • Pour in rum, lime juice, and simple syrup. Stir well.
  • Refrigerate for at least 1 hour to blend flavors.
  • Just before serving, add club soda and stir gently.
  • Fill glasses with ice and pour in mojito mixture.
  • Garnish with extra mint leaves and lime slices if desired.

A light muddle works best, as muddling too hard can make the mint bitter. Chilling helps the flavors meld together nicely.

    Notes

    This recipe is easy to adjust. For a stronger drink, add more rum. For less sweetness, reduce the simple syrup.
    Make sure to add the club soda right before serving to keep the fizz. You can prep the other ingredients ahead of time.
    For a non-alcoholic version, replace rum with extra club soda or lime-flavored sparkling water.
    Leftover mojito mix (without club soda) can be stored in the fridge for up to 2 days. Add fresh club soda when serving.
