Equipment

  • Blender or food processor
  • Fine-mesh strainer
  • Muddler or wooden spoon
  • Pitcher (at least 64 oz capacity)
  • Measuring cups and spoons
  • Cutting board and knife
  • Tall serving glasses
  • Ice cube tray (optional for watermelon ice cubes)

Ingredients

  • 4 cups cubed seedless watermelon about half a medium watermelon
  • 4 cups cold water
  • 1 cup freshly squeezed lemon juice about 6-8 lemons
  • 1/2 cup honey or simple syrup adjust to taste
  • 1/4 cup fresh mint leaves plus extra for garnish
  • 1 lemon thinly sliced for garnish
  • Ice cubes
  • Watermelon wedges for garnish optional

For a less sweet version, reduce the honey to 1/3 cup. The freshness of the ingredients makes a big difference in this recipe. Use ripe, in-season watermelon for the best flavor.

Instructions

  • Prepare the watermelon: Cut watermelon into small cubes and add to the blender. Blend until smooth, about 30 seconds.
  • Strain the puree: Pour the watermelon puree through a fine mesh strainer into a large pitcher to remove pulp and any seeds.
  • Muddle the mint: Place mint leaves in the bottom of the pitcher and gently muddle to release the oils and flavor.
  • Mix the ingredients: Add lemon juice and honey or simple syrup to the pitcher. Stir until honey is dissolved.
  • Add water: Pour in the cold water and stir to combine all ingredients thoroughly.
  • Chill and serve: Refrigerate for at least 30 minutes before serving. Fill glasses with ice, pour in the mocktail, and garnish with watermelon wedges, lemon slices, and fresh mint leaves.

The mocktail can be prepared up to 24 hours in advance and kept refrigerated.

    Notes

This recipe serves about 6-8 people. The mocktail keeps well in the refrigerator for up to 2 days, though the mint flavor intensifies over time.
For a sparkling version, replace half the water with club soda or sparkling water, adding it just before serving. The drink can be adjusted to taste - add more lemon for tartness or honey for sweetness.
For a fun twist, freeze small watermelon chunks to use as ice cubes. They keep drinks cold without diluting and add extra watermelon flavor as they melt.
Children especially enjoy this drink on hot summer days. For adult gatherings, a splash of vodka or white rum can transform this into a cocktail.
