Ingredients

For 4 servings:

  • 4 cups cubed seedless watermelon about ½ medium watermelon
  • 20-25 fresh mint leaves plus extra for garnish
  • 3 tablespoons fresh lime juice about 2 limes
  • 2 tablespoons honey or agave syrup adjust to taste
  • 2 cups sparkling water or club soda chilled
  • 1 cup ice cubes
  • Lime wheels for garnish

For a twist, you can add cucumber slices or replace some watermelon with strawberries.

Instructions

  • Prep the watermelon: Cut watermelon into 1-inch cubes, removing any seeds.
  • Blend: Place watermelon cubes in a blender and pulse until smooth.
  • Strain: Pour the watermelon puree through a fine mesh strainer into a pitcher, pressing gently with a spoon to extract all the juice.
  • Muddle mint: In the pitcher, add mint leaves and gently muddle to release the oils.
  • Add sweetener: Stir in the lime juice and honey until fully dissolved.
  • Chill: Refrigerate mixture for at least 30 minutes to develop flavors.
  • Serve: Fill glasses with ice. Pour the watermelon-mint mixture until glasses are ¾ full. Top with sparkling water and stir gently.
  • Garnish: Add a lime wheel and fresh mint sprig to each glass before serving.

Notes

This mocktail is best served immediately after adding the sparkling water to maintain carbonation. The watermelon-mint base can be made up to 24 hours ahead and stored in the refrigerator.
For a frozen version, freeze the watermelon cubes beforehand and blend with less ice. The drink will be thicker, like a slushie.
You can create a spiked version for adults by adding 1.5 oz of white rum or vodka per serving.
For a kid-friendly presentation, use cookie cutters to make watermelon stars or hearts as garnish on the glass rim.
