  • Muddler
  • Jigger or measuring cup
  • Strainer
  • Highball glass

Ingredients

  • 2 oz silver tequila
  • 1 oz fresh lime juice
  • 1 oz simple syrup
  • 3-4 chunks fresh watermelon
  • 6-8 fresh mint leaves
  • Club soda
  • Ice
  • Mint sprig and watermelon wedge for garnish

Use ripe, sweet watermelon for the best flavor. You can swap the simple syrup for agave nectar if you prefer.

Instructions

  • Add watermelon chunks and mint leaves to the shaker. Muddle gently to release juices and oils.
  • Pour in tequila, lime juice, and simple syrup. Fill shaker with ice.
  • Shake hard for 10-15 seconds until well chilled.
  • Fill a highball glass with fresh ice. Strain the mixture into the glass.
  • Top with a splash of club soda and stir gently.
  • Garnish with a mint sprig and watermelon wedge.
  • Serve right away while it's cold and bubbly. The mint and watermelon flavors will blend as it sits.

Notes

This recipe makes one cocktail. You can easily double or triple it for a group.
For a non-alcoholic version, replace the tequila with more club soda or lemon-lime soda.
To make ahead, mix everything except the club soda and store in the fridge. Add ice and soda just before serving. The flavors will get stronger over time.
Try different melons like cantaloupe or honeydew for variety. You can also add a dash of chili powder for a spicy kick.
