Add simple syrup and gently muddle the mint to release its oils.
Pour in vodka and fresh lime juice.
Fill the shaker with ice and shake for 10-15 seconds until well chilled.
Fill a Collins glass with fresh ice.
Double strain the mixture into the glass to remove mint pieces.
Top with club soda (about 2-3 oz).
Garnish with a lime wheel and fresh mint sprig.
Notes
Store-bought simple syrup works well, but making it at home is easy. Mix equal parts sugar and water, heat until dissolved, then cool.Fresh lime juice makes a big difference - avoid bottled versions. The drink stays cold longer with large ice cubes instead of crushed ice.For a stronger mint taste, add more leaves during muddling.
