Ingredients

  • 2 oz green apple juice cold
  • 3 oz prosecco well-chilled
  • 1/2 oz simple syrup or to taste
  • 6-8 fresh mint leaves
  • 1 oz vodka optional, for extra kick
  • Ice cubes
  • Green apple slices for garnish
  • Extra mint sprigs for garnish

Instructions

  • Add mint leaves and simple syrup to the cocktail shaker.
  • Gently muddle the mint to release flavor, but don’t shred the leaves.
  • Pour in the green apple juice and vodka (if using).
  • Add ice cubes to fill the shaker halfway.
  • Shake well for about 10 seconds until chilled.
  • Strain the mixture into a glass filled with ice.
  • Top with prosecco and stir gently with a bar spoon.
  • Garnish with a few apple slices and a mint sprig.

Notes

I sometimes use fresh green apple juice, which gives the best taste and color. Store-bought juice should be clear and tart, not too sweet.
If my simple syrup is too strong, I add it slowly and taste as I go. When muddling mint, I use light pressure so the cocktail doesn’t become bitter.
Using very cold prosecco keeps the drink lively. If I’m making several drinks, I chill the glasses and the ingredients ahead of time.
For a sweeter cocktail, I add more simple syrup in small steps. If I want less alcohol, I skip the vodka completely.
This recipe can be doubled for parties. It’s flexible, so tweak as you like.
