This Mint Coconut Cooler blends creamy coconut with fresh mint and a splash of lime for a refreshing, tropical cocktail. Light, smooth, and easy to sip!
Drop the mint leaves into your shaker and muddle gently.
Add white rum, lime juice, coconut water, and simple syrup (or honey).
Add ice cubes and shake for 15–20 seconds until well chilled.
Strain into a tall glass packed with fresh ice.
Top with a mint sprig and lime wheel if desired.
Notes
Adjust the sweetness based on your coconut water and taste. For a lighter version, use less rum and more coconut water. Can be made non-alcoholic by skipping the rum.
