  • Citrus juicer
  • Bar spoon
  • Rocks glass or coupe
  • Ice

Ingredients

  • 2 oz mezcal Del Maguey Vida recommended
  • 1 oz fresh lemon juice or lime juice
  • 0.75 oz simple syrup or agave syrup
  • 1 egg white
  • 2 dashes angostura bitters
  • ice cubes

Instructions

  • Toss mezcal, lemon juice, simple syrup, and egg white into your cocktail shaker.
  • Dry shake (without ice) for about 15 seconds to build the foam.
  • Add ice to the shaker and shake again until the outside feels very cold.
  • Strain the drink into a chilled glass.
  • Drop 2 dashes of angostura bitters on top of the foam.

Notes

Use a mezcal with medium smokiness for a balanced flavor. Del Maguey Vida is a solid option. For a sweeter touch, use agave syrup instead of simple syrup. Lemon juice gives a sharper profile; lime offers a softer one. Always use a fresh egg white for the best foam.
