Ingredients

  • 4 cups cubed watermelon seeds removed
  • 1 cup mixed berries strawberries, blueberries, raspberries
  • 1/4 cup fresh lime juice about 2-3 limes
  • 2 tablespoons honey or maple syrup
  • 1 cup cold water
  • 1/2 cup fresh mint leaves plus extra for garnish
  • 2 cups sparkling water or club soda
  • Ice cubes
  • Melon balls and extra berries for garnish

For a sweeter drink, use ripe watermelon and adjust honey to taste.

Instructions

  • Add watermelon cubes to a blender and blend until smooth, about 30 seconds.
  • Pour the watermelon puree through a fine mesh strainer into a pitcher to remove pulp and seeds.
  • In a bowl, muddle the mixed berries with the mint leaves and honey until the berries release their juices.
  • Add the berry mixture to the strained watermelon puree and stir well.
  • Then, pour in the lime juice and cold water, and stir to combine.
  • Refrigerate the mixture for at least 1 hour to chill thoroughly and allow flavors to blend.
  • When ready to serve, fill glasses halfway with ice cubes.
  • Pour the melon-berry mixture into each glass, filling about 3/4 full.
  • Next, top each glass with sparkling water and stir gently.
  • Finally, garnish with fresh mint leaves, melon balls, and a few berries on top.

Notes

This mocktail keeps well in the refrigerator for up to 2 days, though the fresh flavors are best on the first day. For a slushie version, freeze the watermelon cubes before blending.
For a more tropical twist, substitute half the watermelon with ripe honeydew or cantaloupe. Adding a splash of coconut water instead of regular water brings an extra layer of flavor.
To make this drink ahead for parties, prepare the melon-berry base a day in advance. Add the sparkling water only when serving to maintain the fizz.
For a kid-friendly version, reduce the lime juice to 2 tablespoons and increase the honey to 3 tablespoons.
