Ingredients

  • 2 cups fresh watermelon cubed
  • 1 teaspoon matcha powder
  • 1 tablespoon honey or agave syrup
  • 2 tablespoons fresh lime juice
  • 0.5 cup coconut water
  • fresh mint leaves plus extra for garnish
  • 1 cup ice cubes
  • watermelon wedge for garnish, optional

Instructions

  • Blend the watermelon cubes until smooth. Strain through a fine mesh strainer to remove pulp and seeds.
  • In a mixing bowl, whisk the matcha powder with a small splash of hot water using a bamboo whisk until smooth and lump-free.
  • Pour the strained watermelon juice, whisked matcha, lime juice, and honey or agave into a cocktail shaker.
  • Add fresh mint leaves and ice cubes to the shaker.
  • Shake well until the drink is cold and fully combined.
  • Strain into a tall glass filled with ice. Garnish with a mint sprig or watermelon wedge if desired. Serve immediately.

Notes

Choose a ripe, sweet watermelon and you’ll need less sweetener. If your melon is very sweet, you can skip the honey or agave. Add more matcha if you want a stronger tea flavor. Always use fresh mint for best flavor—dried leaves won’t work here. Chill your glass before serving to keep the cocktail cold and crisp.
