  • Small bowl

Ingredients

  • 2 teaspoons ceremonial-grade matcha powder
  • 2 oz white rum or skip for mocktail
  • 6-8 fresh mint leaves plus extra for garnish
  • 2-3 lime wedges
  • 1 oz fresh lime juice
  • 1 oz honey or cane sugar syrup
  • 3-4 oz club soda or sparkling water
  • ice cubes

Instructions

  • Whisk the matcha powder with a splash of hot water in a small bowl using a bamboo whisk until smooth and frothy.
  • Drop lime wedges and mint leaves into a highball glass. Gently muddle to release the juice and mint oils.
  • Add rum, lime juice, and honey (or sugar syrup) to a cocktail shaker with ice. Shake until cold, then strain into the glass.
  • Pour in the whisked matcha and give it a gentle stir with a bar spoon.
  • Top with club soda or sparkling water. Add ice, garnish with a mint sprig and lime wedge, and serve immediately.

Notes

Serve immediately for best bubbles. Use fresh mint and ceremonial matcha for best flavor and color. For a mocktail, skip the rum and add extra soda. Try coconut rum for a tropical twist. Adjust sweetener and lime to taste. Keep plenty of ice in the glass to stay crisp and refreshing.
