Ingredients

  • 2 ripe mangoes peeled and cubed (about 2 cups)
  • 1/4 cup fresh lime juice about 2-3 limes
  • 2 tablespoons honey or simple syrup
  • 15-20 fresh mint leaves plus extra for garnish
  • 2 cups sparkling water or club soda
  • Ice cubes
  • Lime wheels for garnish
  • 1/2 teaspoon freshly grated ginger optional

The quality of mangoes greatly affects the final taste. Choose mangoes that yield slightly to pressure and smell sweet at the stem end.

Instructions

  • Prepare the mango puree: Blend the mango chunks until smooth. Strain through a fine mesh strainer if you prefer a pulp-free drink.
  • Muddle the mint: Place mint leaves in the bottom of a cocktail shaker or large glass. Gently press with a muddler or wooden spoon to release the oils.
  • Mix the base: Add the mango puree, lime juice, and honey to the muddled mint. Stir well to combine all flavors.
  • Assemble the mocktail: Fill glasses halfway with ice. Pour the mango-mint mixture over the ice, filling the glass about halfway.
  • Add fizz: Top with sparkling water and stir gently.
  • Garnish and serve: Add a lime wheel and fresh mint sprig to each glass before serving.

For a party, prepare the mango-mint base ahead of time and add sparkling water just before serving.

    This recipe makes about 4 servings and can be easily doubled for larger gatherings. The mango-mint base keeps well in the refrigerator for up to 24 hours.
    For a sweeter drink, add more honey or simple syrup.
