Ingredients

  • 2 ripe mangoes peeled and cubed (about 2 cups)
  • 3-4 fresh lemons to yield ½ cup juice
  • 2 tablespoons honey or simple syrup
  • 1 cup cold water
  • 1 cup sparkling water or club soda
  • Ice cubes
  • Mint leaves for garnish
  • Lemon slices for garnish

The quality of mangoes matters greatly in this recipe. Choose mangoes that are fragrant and yield slightly to gentle pressure. They should be sweet but not overripe.

Instructions

  • Prepare the mango puree: Add the mango chunks to a blender. Blend until completely smooth. If needed, add 1-2 tablespoons of water to help with blending.
  • Extract lemon juice: Cut the lemons in half and juice them. Strain the juice to remove seeds and excess pulp.
  • Mix the base: In a pitcher, combine the mango puree, lemon juice, and honey or simple syrup. Stir well until the sweetener dissolves completely.
  • Add waters: Pour in the cold water and stir to combine. This creates the flavor base of your mocktail.
  • Chill: Refrigerate the mixture for at least 30 minutes to allow flavors to blend.
  • Serve: Fill glasses with ice cubes. Pour the mango-lemon mixture until glasses are about ¾ full. Top with sparkling water and gently stir.
  • Garnish: Add a sprig of mint and a slice of lemon to each glass before serving.

Notes

This recipe can be adjusted to suit different taste preferences. For a sweeter drink, add more honey or simple syrup. For more tartness, increase the lemon juice.
Make the base mixture ahead of time and store it in the refrigerator for up to 2 days. Only add sparkling water just before serving to maintain carbonation.
For a frozen version, freeze the mango chunks beforehand and blend with the other ingredients for a slushy texture. Skip the added water and use more sparkling water instead.
Try different fruit combinations by replacing half the mango with strawberries or peaches. The recipe works well with other citrus fruits too—lime or orange can substitute for some of the lemon juice.
