Ingredients

For the mango layer:

  • 1 ripe mango peeled and cubed
  • 1/4 cup water
  • 1 tablespoon honey or agave syrup
  • Ice cubes

For the ginger layer:

  • 1 cup sparkling water
  • 2 tablespoons fresh ginger juice from 2-inch piece
  • 1 tablespoon lime juice
  • 1 teaspoon honey

For the sunrise effect:

  • 2 tablespoons grenadine syrup
  • Lime wedges and mint sprigs for garnish

Fresh ingredients produce the best flavor. The mango should be ripe but firm. For the ginger juice, grate fresh ginger and squeeze it through cheesecloth

Instructions

  • Prepare the mango layer: Add mango, water, and honey to a blender. Blend until completely smooth. Strain through a fine mesh strainer if desired for a smoother texture.
  • Make the ginger mixture: Peel and grate fresh ginger, then squeeze through cheesecloth to extract the juice. Mix ginger juice with lime juice and honey.
  • Assemble the mocktail: Fill tall glasses halfway with ice cubes. Pour the mango puree about 1/3 of the way up each glass.
  • Add the ginger layer: Mix the ginger juice mixture with sparkling water. Slowly pour over the back of a spoon onto the mango layer to create separation.
  • Create the sunrise effect: Gently pour grenadine down the inside of the glass to sink to the bottom, creating a gradient effect.
  • Garnish and serve: Add a lime wedge to the rim and a sprig of mint. Serve immediately with a straw.

Notes

This mocktail can be prepared in advance by making the mango puree up to 24 hours ahead and storing it covered in the refrigerator.
For a sweeter drink, add more honey to the mango layer. For a spicier version, increase the amount of ginger juice.
To make this into a cocktail, add 1.5 oz of white rum or vodka to the ginger layer before pouring.
The recipe yields 2 large or 4 small mocktails and takes about 15 minutes to prepare.
For a kid-friendly version, reduce or omit the ginger and add a splash of orange juice instead.
