Ingredients

Mango Base:

  • 2 cups ice cubes

Instructions

  • Prepare the mango puree: Blend the mango chunks with lime juice and honey until smooth.
  • Add the ginger: Mix in the freshly grated ginger to the puree and blend for 10 seconds more.
  • Strain the mixture through a fine mesh strainer into a pitcher or container to remove fibrous bits.
  • For each serving: Fill a highball glass with ice cubes. Pour ¼ cup of the mango-ginger mixture over the ice.
  • Top with sparkle: Add club soda or sparkling water to fill the glass, leaving about ½ inch at the top.
  • Stir gently with a long spoon to combine the ingredients without losing carbonation.
  • Garnish with fresh mint leaves, a slice of mango, and a lime wedge.

Notes

This mocktail can be prepared ahead by making the mango-ginger base up to 2 days in advance. Store it covered in the refrigerator.
For a spicier version, double the amount of ginger or add a small slice of jalapeño (seeds removed) to the blender.
Replace honey with agave syrup for a vegan option. The sweetness can be adjusted based on the ripeness of your mangoes.
