Equipment

  • Measuring cups and spoons
  • Fine-mesh strainer
  • Tall glasses
  • Ice cube tray
  • Citrus juicer

Ingredients

  • 2 ripe mangoes peeled and cubed
  • 1- inch piece fresh ginger peeled
  • 2 tablespoons honey
  • 1 cup coconut water
  • 2 tablespoons fresh lime juice
  • 4-6 mint leaves
  • Ice cubes
  • Club soda
  • Lime slices and mint sprigs for garnish

Instructions

  • Add mangoes, ginger, honey, coconut water, and lime juice to the blender.
  • Blend until smooth and strain through a fine-mesh strainer into a pitcher.
  • Fill glasses with ice cubes. Then, pour the mango mixture until glasses are 3/4 full.
  • Top each glass with club soda and stir gently.
  • Garnish with lime slices and fresh mint sprigs before serving.

Notes

Store extra mango mixture in the fridge for up to 2 days.
For a sweeter drink, add more honey to taste.
Replace coconut water with regular water if needed.
Fresh mangoes work best, but frozen mango chunks can work too. Just make sure to thaw them first.
If the drink is too thick, add more coconut water or club soda.
