Ingredients

  • 1 ripe mango peeled and cubed (about 1 cup)
  • 1 cup ginger ale chilled
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey or simple syrup
  • 1/4 teaspoon ground ginger optional
  • Ice cubes
  • Fresh mint leaves for garnish
  • Lime wedges for garnish

For best results, use ripe mangoes that yield slightly to gentle pressure.

Instructions

  • Peel the mango and cut the flesh away from the pit. Cut into cubes.
  • Add mango cubes to a blender with 1 tablespoon of honey and lime juice. Blend until smooth.
  • Strain the mango puree through a fine mesh strainer to remove any fibrous parts.
  • Fill two tall glasses with ice cubes.
  • Pour half the mango puree into each glass.
  • Top each glass with 1/2 cup of cold ginger ale.
  • Stir gently to combine all ingredients without losing carbonation.
  • Garnish with fresh mint leaves and a lime wedge on the rim of each glass.

If using the optional ground ginger, add it to the blender with the mango for extra spice.

    Notes

    This mocktail can be prepared up to 24 hours ahead by making the mango puree and refrigerating it. Add the ginger ale just before serving to maintain carbonation.
    For a frozen version, freeze the mango chunks before blending. This creates a slushy texture perfect for hot days.
