Ingredients

  • 1 cup fresh or frozen mango chunks
  • ½ cup coconut milk
  • 2 tablespoons fresh lime juice about 1 lime
  • 1 tablespoon honey or agave nectar
  • 2 cups sparkling water or club soda
  • Ice cubes
  • Fresh mint leaves for garnish
  • Lime slices for garnish
  • Toasted coconut flakes for garnish optional

Ripe mangoes work best for this recipe. Look for mangoes that yield slightly to gentle pressure. If using canned mango, drain well and rinse to remove excess syrup.

Instructions

  • Prepare the mango puree: Add mango chunks to a blender with 2 tablespoons of water. Blend until smooth.
  • Strain the puree through a fine mesh strainer into a bowl to remove any fibrous bits. This step is optional but creates a smoother drink.
  • Mix the base: In a cocktail shaker or mason jar, combine the mango puree, coconut milk, lime juice, and honey.
  • Shake well with ice until thoroughly mixed and chilled, about 15-20 seconds.
  • Prepare glasses by filling them halfway with ice cubes.
  • Pour the mixture into glasses, filling about ⅓ of the way.
  • Top with sparkling water and stir gently to combine.
  • Garnish with mint leaves, lime slices, and coconut flakes if desired.
  • Serve immediately while the drink is cold and the bubbles are still fizzy.

Notes

This recipe makes about 4 servings. The mango puree can be prepared ahead of time and stored in the refrigerator for up to 2 days.
For a colder drink, freeze mango chunks in advance. This eliminates the need for ice which can water down the flavor.
The sweetness level can be adjusted by adding more or less honey. Taste as you go to find your preferred balance.
For a cocktail version, add 1-2 ounces of white rum or coconut rum per serving.
Try other fruit variations like pineapple, peach, or strawberry instead of mango for different flavor profiles.
