Add Malibu coconut rum, pineapple juice, and fresh lime juice.
Shake the rum, juice, and lime together in a cocktail shaker, or just stir in the glass if you prefer.
Top with ginger beer.
Stir gently with a bar spoon.
Garnish with pineapple, lime, or a cherry. Serve immediately.

Chill everything for max refreshment. Make it frozen by blending the rum, juice, and ice, then topping with ginger beer. Adjust sweetness or sharpness by changing the lime or ginger beer amount. Use pineapple chunks as a garnish or even as “ice.”
