A tropical twist on the classic mule—Malibu coconut rum, pineapple juice, fresh lime, and ginger beer over ice. Crisp, fruity, and super easy for summer or any time you want a light, fizzy cocktail.

Equipment

  • Highball glass or tall glass
  • Cocktail shaker
  • Bar spoon
  • Blender (optional for frozen)
  • Jigger or small measuring cup
  • Cutting board and knife
  • Ice cube tray

Ingredients

  • 2 oz Malibu coconut rum or any coconut-flavored rum
  • 3 oz pineapple juice
  • 1 oz fresh lime juice
  • 3 oz ginger beer
  • ice cubes to fill the glass
  • pineapple wedge or chunk for garnish
  • lime wedge for garnish
  • maraschino cherry optional, for garnish

Instructions

  • Fill a highball or tall glass with ice cubes.
  • Add Malibu coconut rum, pineapple juice, and fresh lime juice.
  • Shake the rum, juice, and lime together in a cocktail shaker, or just stir in the glass if you prefer.
  • Top with ginger beer.
  • Stir gently with a bar spoon.
  • Garnish with pineapple, lime, or a cherry. Serve immediately.

Notes

Chill everything for max refreshment. Make it frozen by blending the rum, juice, and ice, then topping with ginger beer. Adjust sweetness or sharpness by changing the lime or ginger beer amount. Use pineapple chunks as a garnish or even as “ice.”
