Equipment

  • Cocktail shaker or mixing glass
  • Bar spoon
  • Measuring jigger
  • Strainer
  • Tall glass
  • Knife and cutting board
  • Ice cubes

Ingredients

  • 2 oz Malibu Rum coconut rum
  • 3 oz pineapple juice
  • 1 oz grenadine
  • 2 oz lemon-lime soda or ginger ale
  • pineapple wedge for garnish
  • maraschino cherry optional, for garnish
  • ice cubes

Instructions

  • Fill your shaker with ice.
  • Pour in the Malibu Rum and pineapple juice.
  • Shake lightly until cold.
  • Strain into a tall glass full of ice.
  • Pour grenadine in slowly so it settles at the bottom.
  • Top with lemon-lime soda or ginger ale.
  • Garnish with a pineapple wedge and a cherry, if you like.

Notes

Use more soda for a lighter drink, or extra rum for more kick. Fresh pineapple juice is best. To make a punch, combine all but the soda, then add soda just before serving. Try frozen pineapple instead of ice for even more flavor!
