Ingredients

  • 2 oz Malibu Coconut Rum
  • 1 oz fresh lime juice
  • 3 oz chilled sparkling water or club soda
  • 0.5 oz simple syrup optional, for extra sweetness
  • ice cubes
  • lime wheel or wedge for garnish
  • fresh mint sprig optional, for garnish

Instructions

  • Fill a shaker with ice.
  • Add Malibu Coconut Rum and fresh lime juice.
  • Shake lightly for about 10 seconds.
  • Strain into a glass filled with ice.
  • Top with chilled sparkling water or club soda.
  • Stir gently with a bar spoon to preserve the bubbles.
  • Garnish with a lime wheel or mint sprig. Serve immediately.

Notes

Chill the sparkling water before adding for maximum refreshment. Taste before serving and adjust with simple syrup if needed. Solid ice cubes are best—they keep the drink colder longer without watering it down. Garnish simply for a fresh look.
