Ingredients

  • 2 oz Malibu coconut rum
  • 1 oz vanilla vodka
  • 1 oz cream of coconut or coconut cream
  • 1 oz fresh pineapple juice
  • 0.5 oz lime juice
  • 0.5 oz simple syrup optional, for extra sweetness
  • ice cubes
  • toasted coconut for rimming the glass, optional
  • pineapple wedge or slice for garnish

Instructions

  • Fill your cocktail shaker with ice.
  • Add Malibu coconut rum, vanilla vodka, cream of coconut, pineapple juice, lime juice, and simple syrup if using.
  • Shake hard for about 15 seconds, until the shaker feels frosty.
  • Strain into a chilled martini glass.
  • Rim the glass with toasted coconut if desired.
  • Garnish with a pineapple wedge or slice. Serve immediately.

Notes

Substitute plain vodka or white rum for a less sweet or different flavor profile. Use coconut milk for a lighter drink. Rimming the glass with toasted coconut and sugar adds texture and flair. Fresh pineapple juice gives the best result.
