This cocktail is all about keeping things easy and fun. Sweet lychee, tangy lime, and a hit of gin make for a summer drink that’s as simple as it is delicious.
Prepare the glass - Fill a highball glass with ice cubes.
Muddle the fruit - Drop 2-3 lychees in your shaker and gently muddle them. You want the juice, not a puree.
Mix the cocktail - Add gin, lychee syrup, lime juice, and simple syrup to the shaker. Throw in some ice and shake it like you mean it for about 15-20 seconds.
Strain and finish - Pour everything into your prepared glass. Top with club soda and give it a gentle stir.
Garnish - Pop on a lime wheel and a whole lychee (skewered if you’re feeling fancy).
Let it sit for half a minute or so. The flavors come together a bit more if you’re patient.
Notes
Tweak away to suit your taste. Like it sweeter? Add more lychee syrup. Want it more tart? Squeeze in extra lime.Making these for a crowd? Just scale up the recipe. Mix everything but the club soda ahead of time and chill. When you’re ready, add ice and soda and serve. No gin? Or just want to skip the booze? Swap in more club soda or tonic water for a mocktail that’s honestly still pretty great. This drink works really well with spicy Asian food or light snacks. Best served ice-cold on a hot day, though I’d say it’s good any time you want a taste of summer.
