Ingredients

For one Lychee Lemon Cooler cocktail, you'll need:

  • 2 oz vodka
  • 1 oz lychee liqueur
  • 1 oz fresh lemon juice
  • 1 oz simple syrup
  • 2-3 fresh or canned lychees
  • Club soda
  • Ice
  • Lemon slice and lychee for garnish

You can adjust the sweetness by changing the amount of simple syrup. For a non-alcoholic version, skip the vodka and lychee liqueur and add more club soda.

Instructions

  • Put 2-3 lychees in the bottom of a cocktail shaker and muddle gently.
  • Add vodka, lychee liqueur, lemon juice, and simple syrup to the shaker.
  • Fill the shaker with ice and shake well for 10-15 seconds.
  • Strain the mixture into a tall glass filled with ice.
  • Top off with club soda and stir gently.
  • Garnish with a lemon slice and a whole lychee on a cocktail pick.

Serve right away while the drink is cold and bubbly.

    This cocktail is best enjoyed fresh. You can make a big batch for parties by multiplying the recipe. Just add the club soda when serving.
    Canned lychees work well if fresh ones aren't available. Their syrup can replace some of the simple syrup for extra lychee flavor.
    For a stronger lychee taste, use lychee juice instead of simple syrup. This will make the drink less sweet and more fruity.
    Try different garnishes like mint leaves or a slice of lime for variety. You can also rim the glass with sugar for a sweeter touch.
