Equipment

  • Cocktail shaker
  • Jigger or measuring cup
  • Highball glass
  • Ice
  • Cocktail strainer
  • Bar spoon
  • Citrus juicer

Ingredients

  • 2 oz vodka
  • 1 oz lychee syrup from canned lychees
  • 2-3 whole lychees
  • 1/2 oz fresh lime juice
  • 4 oz ginger beer
  • Ice cubes
  • Fresh mint leaves for garnish
  • 1 thin slice of ginger optional

Instructions

  • Fill the cocktail shaker halfway with ice.
  • Add vodka, lychee syrup, and fresh lime juice to the shaker.
  • Shake vigorously for 10-15 seconds until well chilled.
  • Fill a highball glass with fresh ice.
  • Strain the mixture into the glass.
  • Top with ginger beer and stir gently with a bar spoon.
  • Drop in 2-3 whole lychees.
  • Garnish with mint leaves and a slice of ginger.

Notes

The drink can be made non-alcoholic by skipping the vodka and adding more ginger beer.
Store leftover lychee syrup in an airtight container in the fridge for up to 2 weeks.
Fresh lychees can replace canned ones when in season. Peel and pit them before use.
For extra ginger flavor, muddle a small piece of fresh ginger in the shaker before adding other ingredients.
