A Mediterranean-inspired Collins: limoncello, gin, lemon, and a fragrant rosemary simple syrup, finished with club soda for an herbal, sparkling sipper.
To make rosemary syrup: Simmer equal parts sugar and water with fresh rosemary, then cool and strain.
Add gin, limoncello, lemon juice, and rosemary syrup to a shaker with ice. Shake until chilled.
Strain into a Collins glass filled with ice.
Top with club soda and stir gently.
Garnish with a rosemary sprig and lemon wheel.
Notes
Make rosemary syrup ahead for speed. For a lighter drink, use more club soda. Try with vodka instead of gin. Fresh rosemary boosts aroma and makes a stunning garnish.
