A sunshiny brunch or party cocktail—fresh peach puree and bright limoncello topped with prosecco for an Italian-inspired Bellini with a citrus twist.

Ingredients

ripe peach
peeled, pitted, and chopped

oz
limoncello

oz
prosecco
chilled
Ice cubes
if needed for blending
Peach slice
for garnish
Mint sprig
for garnish
Instructions
Blend peach with limoncello until very smooth. Add ice if needed for consistency.
Strain mixture into champagne flutes.
Top each glass with prosecco. Stir gently to mix.
Garnish with a peach slice and mint sprig.
Notes
Use frozen peaches if fresh are out of season. For a sweeter drink, add a splash of simple syrup. Chill flutes for maximum bubbles!
